Recipes for Children

These recipes were found at the Child Nutrition and Health Campaign

MORNING EATS

One-third of school-age kids fix their own breakfasts. Parents and children should stock a "breakfast bar" that includes several kinds of cereals, raisins, fruit, juice, milk and yogurt, breads, rice cakes, breakfast bars, hard-boiled eggs and peanut butter and jelly. Here are a few simple "daily specials" for children to try in the kitchen.

DAILY SPECIALS:

BLOBS
Ingredients:

1/2 cup peanut butter, chunky or smooth
1/4 cup non-fat dry milk
Honey to taste
3 cups flake cereal

Directions: Mix the peanut butter, dry milk and honey in a large bowl with a wooden spoon. Crush the cereal in a large plastic bag (or crush 1 cup at a time in a sandwich-size plastic bag). Add the cereal to the peanut butter mixture. Stir with the spoon until combined. With wet hands, form about 1/4 cup of the mixture into a patty or squeeze to make an oblong blob. Place on a dinner plate. Cover with plastic wrap and refrigerate until firm, about 30 minutes. Store, covered, in the refrigerator.

Number of servings: 10

CATERPILLARS*
Ingredients:

1/2 cup flake cereal
1 tube (11 ounces) refrigerated soft breadstick dough
Yogurt, fruit, applesauce, or cottage cheese

Directions: Heat oven to 350 degrees F. Spread a large piece of waxed paper or aluminum foil on the kitchen counter.

Put cereal into a sandwich-size plastic bag and lightly crush. One at a time, unravel dough on waxed paper or foil. Fold dough in half so it's about 6 inches long. Put the dough into the plastic bag and turn it until it is coated with cereal. Place on an un-greased baking sheet, slightly curving the dough to look like a caterpillar.

Repeat with the remaining pieces of dough. Place the dough pieces about 1 inch apart on the baking sheet.

Bake until light brown, about 15 minutes. Cool 5 minutes, then eat warm.

Good with yogurt, fresh fruit, applesauce, or cottage cheese.

Number of servings: 8

*An adult should help with the oven.

FRESH STRAWBERRY SANDWICH
Ingredients:

1 slice whole-grain bread, lightly toasted
1 teaspoon soft margarine or butter
4-5 fresh, ripe strawberries, washed, stems removed and smashed
1/4 teaspoon sugar

Directions: Put warm toast on a small plate. Spread lightly with margarine or butter. Spread strawberries evenly on the buttered bread. Sprinkle with sugar. Gently press the strawberries with a fork until the juice mixes with the sugar. Cut in half.

Number of servings: 1

BREAKFAST BURRITO*
Ingredients:

1 flour tortilla, heated according to package directions
1 egg, scrambled
1 tablespoon prepared salsa
1 tablespoon grated cheese

Directions: Lay warm tortilla on a dinner plate. Spread the cooked egg in the middle. Spoon the salsa on top of the egg. Sprinkle with cheese. Fold one side of the tortilla over the egg, then roll up.

Number of servings: 1

*An adult should supervise children working near the stove.

BAKED APPLE*
Ingredients:

1 medium baking apple, washed, not peeled
1 tablespoon brown sugar
6 raisins
2 teaspoons margarine or butter
1 sprinkle of ground cinnamon
1 whole-grain waffle, toasted, quartered

Directions: Cut out the core of the apple. With a peeler, pare the skin from around the top of the apple. Put the apple in a small microwave dish. Put the brown sugar and raisins into the center. Top with margarine or butter. Sprinkle lightly with cinnamon. Cook uncovered in a microwave oven for 2 to 2 1/2 minutes on High, or until the apple is almost tender when stuck with a fork. Let stand 5 minutes. Serve with a toasted whole-grain waffle.

Number of servings: 1

*An adult should help prepare the apple and supervise the microwave.

FAST-BREAKING FRUITS*

  • Freeze grapes in single layer in small pan. Eat frozen.
  • Crush 1/2 cup cereal in plastic bag. Add one cut-up banana. Toss to coat.
  • Serve fresh fruit on waffles, French toast, or pancakes.
  • Dip cut-up fruit in low-fat lemon yogurt.
  • Scoop melon into balls.
  • Cut orange into "smiles." Smile as you eat'em!
  • Combine 1 carton low-fat vanilla or lemon yogurt and 1 frozen banana (cut up) in blender.
  • Eat blueberries from an ice cream cone.

*Younger children should be supervised when cutting fruit or using a blender.
